Bockwurst with Potatoes and Onions

A dish with bockwurst, potatoes, and onions feeds the entire family and leaves everyone satisfied.

Ingredients

  • 4 large red or russet potatoes
  • ¼ cup vegetable oil
  • 1 large yellow onion
  • Andi’s Bockwurst
  • 2 tsp salt
  • ½ tsp garlic powder
  • ¼ tsp pepper
  • Fresh parsley, chopped

Directions

  • Wash and rinse potatoes, cut potatotes into halves, then quarter each half
  • Chop large onion into large, 1/2 inch pieces
  • Heat a large saute pan on medium to low heat, add vegetable oil potatotes and onion
  • Cover with a lid and cook for 15 minutes, stirring occasionally
  • While the potatoes and onions are cooking, cut the ring bologna into 1/2 pieces
  • After 15 minutes, potatoes should soften and onions should be wilted and turning slightly golden brown. Add Bockwurst, salt, garlic powder, and pepper.
  • Cook another 15 minutes, stirring occasionally until potatoes and onions are golden brown.
  • Serve family style and enjoy!
