A dish with bockwurst, potatoes, and onions feeds the entire family and leaves everyone satisfied.

Ingredients
- 4 large red or russet potatoes
- ¼ cup vegetable oil
- 1 large yellow onion
- Andi’s Bockwurst
- 2 tsp salt
- ½ tsp garlic powder
- ¼ tsp pepper
- Fresh parsley, chopped
Directions
- Wash and rinse potatoes, cut potatotes into halves, then quarter each half
- Chop large onion into large, 1/2 inch pieces
- Heat a large saute pan on medium to low heat, add vegetable oil potatotes and onion
- Cover with a lid and cook for 15 minutes, stirring occasionally
- While the potatoes and onions are cooking, cut the ring bologna into 1/2 pieces
- After 15 minutes, potatoes should soften and onions should be wilted and turning slightly golden brown. Add Bockwurst, salt, garlic powder, and pepper.
- Cook another 15 minutes, stirring occasionally until potatoes and onions are golden brown.
- Serve family style and enjoy!
